Zucchini Parmigiana with carasau bread (no fries, no bakings)
One of the most popular recipe of mine is the light & speedy parmigiana (lots of followers!!) Today I thought about preparing a different version though. I’m going to use zucchini (just a little bit cooked in the pan) and carasau bread that I just received from Sardegna.
The result shows something in between a Parmigiana and a Lasagna. Just try it and discover a new delight.
INGREDIENTS: (for a 30 cm oven baking sheet)
3/4 big zucchini
300 gr tomato sauce
100gr grated parmesan
Half scamorza or racy cheese
extra-vergin olive oil
salt and pepper (to taste)
6/7 fresh basil leaves
