Oven Roasted eggplant

Very easy and delicious. It grants the whole family (my daughter has a sort of love/hate relationship with vegetables) and then it is very quick to prepare, You should only have basic elements in the house: mozzarella, tomato sauce, fresh herbs and of course a luscious firm aubergine.

I used a rectangular non-stick baking tray by Pentalux, which allowed me to obtain the perfect result.

INGREDIENTS:

eggplants
extra-virgin olive oil
a pinch of salt
1 tomato sauce
2 mozzarella
marjoram
basil
a pinch of pepper
